Breakfast Saturday...
*Whole Wheat Oat pancakes = :) :) :)
Strawberries

Dinner Saturday...
Sweet and Sour Pork with Couscous = :)
Steamed Asparagus
*Dessert/Frogurt in Ogden = :) :) :)

I'll share our :) (recommended recipes in the very near future.) Here's a recipe on the menu tonight...

Sweet Potato Pancakes
2 large sweet potatoes
1 tsp. hot curry powder
1 egg
1 tsp. salt

Grate sweet potatoes and mix with with other ingredients. Cook by spoonfuls in a greased skillet (we use olive oil, canola oil, or coconut oil.) Turn only once. Serve with plain greek yogurt

Note: These are still yummy WITHOUT EGGS. Just omit the egg. It's a little crumbly but that beats an allergic reaction. :) Also, use lots of oil so that it doesn't stick! BTW, our baby recently tested negative to an allergy to soy and shellfish. Now, we just have to watch out for eggs and peanuts.

so many new recipes in one weekend = :(
too many dirty dishes!

Spinach Garlic Toast

For all of you who are looking for new ideas using spinach. Try this. My kids love it.
P.S. Only use 1/2 of the garlic...and don't be afraid to cut back on the butter.

True story of the day: My second-grade daughter was a lunch helper at school today. With that she earned a treat. I think it is great that she earned a reward for helping in the lunchroom. It was 2 cookies and a chocolate milk. So guess what she chose to eat for lunch? The "treat" or the home-packed turkey sandwich, cucumbers (which she typically loves), and grapes? I'd be lying if I said I wasn't a little bugged. How would you feel about that situation?

Another P.S. She loves working in the lunchroom. The very act seems to be reward enough.
What do you put in your kid's lunchbox that they love (and is healthy?)
